What Can We Do To Preserve Our 2nd Amendment?

Second AmendmentOur Second Amendment rights to keep and bear arms have been coming under severe attack over the last several years. Ever since President Obama took office, he’s been seeking every opportunity he could to infringe upon those rights. Gun and ammo sales have gone through the roof, as people have sought to make sure that they bought guns before Obama managed to make it illegal.

The truly surprising thing about all this is that Obama didn’t take advantage of the opportunity to repeal the 2nd Amendment during his first two years of office, while he had control over both houses of Congress. Had he tried to then, he might have been able to succeed; after all, he managed to push Obamacare through, without a single Republican vote.

Gun control advocates give all sorts of emotional reasons why guns should be taken out of the hands of ordinary citizens and left in the hands of only the police and military.

They point to statistics from countries which have strict gun control laws, and applaud them for their low murder rates. But they are selective in their choosing of facts when they do that, making sure that they use facts which can be bent to supporting their situation.

One of their favorite facts is that there is more gun-related violence in the United States than anywhere else in the world. Of course, to do so, they have to ignore terrorist actions in the Middle East, as well as calling Muslim terrorist actions in the United States, normal crime, like “workplace violence.”

Based on that, they are right to say that the United States is third in murders around the world. But at the same time, if you remove Chicago, Detroit, New Orleans and Washington from the statistics, we drop to fourth from the bottom. The interesting thing is, those four cities have been controlled by Democrat politics for decades and they have some of the most restrictive gun control laws in the country.

Many of those who are opposed to the 2nd Amendment are simply afraid of guns. My wife used to be that way. She’d literally close her eyes if a gun appeared on the TV set. She didn’t know anything about them, except that they made a lot of noise and people used them to kill other people. Her dislike was fueled by her ignorance.

Now my wife has a concealed carry license, goes to the shooting range with me and has her own pistol. She’s not about to become Annie Oakley, but her views have changed. Why? Because she’s smart enough to learn and overcome her fear.

While the masses who are in favor of gun control join in because of fear; the political class is different. They are interested in gun control because of control. They recognize that they will never gain complete control over the United States as long as there is an armed citizenry; so they want to get rid of guns. Historically, when that happens, the next step is getting rid of millions of people.

Considering the rhetoric coming out of the left and how they automatically classify conservatives as violent, stupid terrorists, it’s clear who those millions of people will be. They won’t be illegal aliens that commit crimes, drug pushers or Muslims who support terrorists. No, it will be you and I; those that oppose the progressive liberal left and the direction they are taking this country.

So, What Can We Do?

2nd-AmendmentThe first thing we need to do is to shed the idea that we can’t do anything. Too many people have accepted the idea that we are unable to do anything. We have a voice and it’s time we started using it.

If you look at the direction that the country has gone in the last few years, it’s clear that two groups–LGBT and Muslims — have made the biggest gains in furthering their agenda. Both are receiving a huge amount of support, while only representing a very miniscule part of the population.

How is that so? They are successful because they’ve learned how to use our country’s political system to their benefit. They paint themselves as being discriminated against, and spend millions painting that picture.

Now, I realize that conservatives are much less likely to give their money to some cause that actually helps people, rather than political movements, but that is working against us. The other side is pouring a huge amount of money into pushing their agenda, while we, the backbone of America, spend very little on supporting our point of view. So, the message of those fringe groups ends up sounding like the message of mainstream America.

Ask any liberal politician and they’ll tell you that they are supporting the viewpoint of the majority of the population. Why? Because that’s the only voice that’s making any noise. We, the “silent majority” have been silent too long; and now our silence is costing us.

So, How Do We Make Our Voice Heard?

1. Join Pro-Gun Organizations

It’s not that there aren’t any pro-gun organizations in the country, there are. The biggest is the National Rifle Association (NRA). While they have more members and spend more on political lobbying than any other organization, they aren’t the only ones. Others include:

  • National Association for Gun Rights
  • Firearms Coalition
  • Second Amendment Foundation
  • Citizens Committee for the Right to Keep and Bear Arms
  • The Second Amendment Sisters
  • Armed and Secure
  • Gun Voter

Joining these organizations means that when their lobbyists go talk to Congress, they can say, “I represent five million people.” That’s the type of introduction that gets attention. Our elected officials may be largely bought by big money, but they still need votes. When a lobbyist says big numbers, they tend to listen.

This makes joining these sorts of groups one of the most effective ways of getting your voice hears. Even if you aren’t keeping up with what’s going on in the political realm, having your name on those lists helps ensure that you’ll have the best possible representation for your point of view.

2. Call Your Congressman

Our nation is supposed to be a republic. That means that we have elected officials, who are supposed to vote the way that the citizens in their districts want them to vote. But for them to do that, they need to know our will. So, we need to let them know.

Typically, seems like there are more liberals who are quick to call their congressmen and spout off than there are conservatives. So, the word that gets to the congressmen is to vote liberal. While they may or not follow that, it still will affect their voting. Just knowing that the majority are in favor of or oppose a particular piece of legislation will be a factor in their thinking about it.

The problem here is that in order to make your voice heard, you need to keep aware of what gun legislation is being debated and voted upon. If you don’t, the opportunity will pass you by. So, you need to keep at least a partial eye on politics, which probably isn’t your favorite subject.

Here again, the pro-gun organizations can help. Most of these organizations send out e-mails and announcements to their members when legislation is up for vote. That gives you the opportunity to contact your Senators and Congressmen, and tell them where you stand on that issue. It only takes a moment to make that phone call or send an e-mail, and you’ve made your voice heard.

If enough of us would regularly do this, it would make a huge difference. Sadly, few do. That is ultimately contributing to the erosion of our rights.

3. Carry Responsibly

Thomas JeffersonIt is important to exercise the rights that we do have and to do so in a way that everyone can easily recognize as responsible. There’s absolutely no rationale behind arguing for more rights, if we’re not using the rights that we already have. So, if your state allows open carry, then carry.

Personally, I would have to put some limitations on that. Carrying loaded AR-15 into the supermarket might be within your legal rights, but that doesn’t necessarily make it a good idea. The problem is that there are too many people who will be afraid to see you or I carrying a gun like that. They don’t know the law and they don’t know guns, hence their fear.

The real problem is that these actions give ammunition to the anti-gun crowd. They point to those who carry in that manner as being “irresponsible” even though you and I know better. Some will be won by those arguments.

Please note, I’m not saying don’t carry a pistol in the supermarket; all I’m recommending is to not carry a long gun there. A pistol is totally appropriate in a store, if it is legal in your state. On the other hand, a long gun is more appropriate for use outdoors, rather than indoors.

I fully support open carry demonstrations, such as those conducted by groups who carry outdoors in public places, fully obeying the law. This is exercising one’s right and doing so in a way to help acclimate the general population to the idea of law-abiding citizens carrying weapons in the open.

I would also suggest getting a concealed carry permit for the state in which you live. Most states are now “will issue” states; meaning that unless there is a reason not to issue a license, they will. So, as long as you’re not under indictment or a criminal felon, you shouldn’t have any problem getting a concealed carry license. Then again, if you get it, carry it.

There’s more to carrying responsible than just obeying the law. If you are going to carry a firearm, then you need to practice with it, so that you will be proficient in its use. Should the time ever come when you need to unholster your weapon, then you want to make sure that you can hit the target.

4. Learn to Articulate the Arguments in Favor of the 2nd Amendment

There are actually three camps on this issue. There are those who are pro-gun and those who are anti-gun. But there’s also a huge group of people who are undecided. We need to reach these people, as they can be the ones who tip the scale in our favor.

You have to remember that these people are getting all the negative talking points about guns thrown at them constantly. But they aren’t getting the positive s side of gun ownership. They’re not hearing the statistics that show how gun ownership and concealed carry licenses help to lower the crime rate. They aren’t hearing about crimes that are actually stopped by responsible law-abiding citizens.

That’s where you and I come in. If you’re going to carry, especially carry openly, you need to be ready to be questioned. When that happens, you need to be ready to give well thought out, well articulated reasons for why you carry, backed up by the appropriate statistics.

I’m not talking about debating with liberals; that doesn’t do any good (unless you have an audience). I’m talking about the person who has a legitimate question or doubt, not the one who just wants to call you names. Those people’s questions deserve an answer and they deserve a good one. You could be the person who swings their opinion in favor of the Second Amendment.

5. Make it Hard to Enforce any New Gun Control Laws

I want to be careful on this one. First of all, let me say what I’m not saying. I’m not saying that it’s okay to sell guns to others who might be criminals. Nor am I saying that you should break the law in any way. We don’t want to be any part of criminals getting their hands on guns.

Okay, so the gun control crowd wants to require registration; which will invariably be followed up by confiscation. So, we want to make that impossible to accomplish. How can we do that?

First of all, there already is a record of most firearm sales in this country. Those with a Federal Firearms License (FFL) are required to keep meticulous records of every firearm they receive and that they sell. The Bureau of Alcohol, Tobacco and Firearms (ATF or BATF) audits those records on an annual basis, to verify that they are complete and accurate.

I’ve seen some pretty strong evidence to show that ATF agents copy records when they do these audits. So, there’s a good chance that there is some federal database, even if it is illegal. That database could be the foundation of creating a nationwide firearm registration.

Buy Private

The first way to keep your gun ownership off those records is to buy all your firearms in private, local sales. Even if the seller requires a receipt, that won’t prove that you own the gun. So, you can own guns that the government can’t trace to you.

Sell Private

Selling guns privately that you no long want (is that possible?) is another way of confounding the system. When you sell a firearm, there is no requirement that you keep records of the sale. However, I would recommend making a call to the NCIC database and check on the identity of the person who is buying it from you. This is the same criminal database that FFL dealers use and it is open to public use. By doing this, you are helping to ensure that you are not getting guns into criminals’ hands.

Build Your Own

If you build your own guns, there is no legal requirement to have a serial number on it or to have it registered in any way. However, you cannot sell it or move it across state lines.

There are two different ways of building your own guns. The first is to buy what is known as an 80% lower. This is an AR-15 lower receiver that is only 80% machined. You have to finish the other 20% of the machining work yourself, in order to build the gun. As long as you buy it 80% complete and do all the work yourself, this is legal.

You can also buy 80% lowers for some other military styled firearms, guns that predate the AR-15. These are not as common, but there are a few available. It is also a bit harder to find the parts to finish them out; but once again, they are available. There is also an 80% frame available now for a 1911 pistol.

The second way to build your own firearms is to build black powder “historic” firearms. Technically, there is no requirement to put a serial number on any “historic firearm” regardless of whether it works or not. So, as long as it qualifies as historic, you can build one and not worry about some part showing up at your doorstep with a serial number stamped in it.

Hide Some Guns

If you’re going to go through all this trouble, it’s a good idea to hide some of your firearms as well. That way, if the government does institute door-to-door searches, hopefully they’ll leave after finding your obvious guns, leaving you the hidden ones.

I have been shopping hand grain mills for awhile and looking for something on less than a champagne budget! I found a Retsel Little Ark that looks good to me and made in America, which will usually make any item a favorite. Then I found your review today on the Wondermill Junior. Wanted to see if anyone out there had any experience with the Retsel. They look very similar, including in price. Just wondering.

Total Blackout: How To Tell If An EMP Has Happened

BIG EMP TEST

Think about this scenario: suddenly, all electric devices stop working, and your first thought is that the power grid is down due to a temporary malfunction. You think that everything is going to turn back to normal in minutes, but six hours later you’re still in the dark. Is this just a simple blackout? Or the feared EMP has happened?

There is at least one way to get an easy answer. All you need to determine whether you are experiencing a regular power outage or an EMP are only three transistor AM/FM/ Shortwave radios. Find out how this works in the following article.

How to Apply the Three Radios Method 

Using three transistor AM/FM/Shortwave radios, an improvised Faraday cage and a simple SOP, you can determine whether you are experiencing a simple blackout or an EMP and if it is an EMP, whether it is geomagnetic or nuclear in nature.

Let’s see the steps that you should take to find out if the EMP is the one that caused the blackout:

  1. Tune the three radios to your local emergency frequency.
  2. Plug one into a grid-connected power outlet and fully extend the antenna. It does not matter if the power is on or off.
  3. Run the second radio on batteries with the antenna fully extended.
  4. Wrap the third radio in a non-conductive envelope and store it (turned off) in a Faraday cage.

After the power goes out, check the first radio. If you hear your local radio station, the outage was probably not caused by an EMP or it was a very minor one.

If the first radio is dead, proceed to the second radio which runs off batteries and is not connected to a wall outlet. If the second radio works, the first radio is likely a casualty of a geomagnetic EMP, but it is possible that it may have succumb to a spike, surge or other power problem outlet caused by a blackout.

If it was a blackout, you should still pickup radio stations since they have backup power. If it was a geomagnetic EMP, the radio will still function, but many local radio stations many not be transmitting because they have been affected by the EMP or because they were intentionally shut down to reduce the effect of a geomagnetic EMP since there is often forewarning.

In either case, you may be able to receive shortwave transmissions from outside the affected area since they travel very great distances. If you are able to receive transmissions, listen for news as to the cause, scope and expected duration of the outage. In a large solar storm of long duration, the second radio will still work, but it may be a day or so before you begin receiving transmissions again.

If the second radio is also dead, there is a significant probability that you have experienced a nuclear EMP. Remove the third radio from the Faraday cage. If the electromagnetic shielding provided by the Faraday cage is sufficient, and there are no leaks in the shielding, the radio should work. Depending on the extent, duration and repetition of the use of nuclear weapons, just realize that after a nuclear EMP, it will take several hours before shortwave transmission return to normal since the upper atmosphere will be disturbed and that subsequent nuclear EMPs could destroy the radio once you remove it from the Faraday cage.

The three radios should be known, good AM/FM/Shortwave radios, but you can use cheap models for the “victim” radios. The certainly of this experiment with a group of three radios will not be absolute, but it will give you a reasonable degree of certainty. Repeating the observations with other radios in your community, you can arrive at a greater degree of certainty about what is happening.

Why This Method Works

In order to understand the significance of geomagnetic vs nuclear EMP, and why this type of experimentation works, you must first understand that there are two main types of EMP: EMP caused by man and EMP which occurs naturally.

Of the natural origins of EMP, the type scientists believe is the most probable comes from our sun, when it spits out a CME that lobs an electromagnetic solar storm which intersects with the earth’s orbit. It interacts with the Earth’s magnetic field, resulting in geomagnetically induced EMP. This type of EMP will not affect things that are not plugged into power lines, phone lines or other long conductors which run parallel to the surface of the Earth (and consequently parallel to the Earth’s magnetic field) and essentially act as EMP antennas.

So, an EMP that originates from the sun, should not affect cars or battery-operated microelectronics that are not plugged into a wall receptacle, but they can, and do cause blackouts.

A blackout caused by a geomagnetic events could affect an area as small as a portion of a city or county or could be so large that it affects entire continents or anything in between. A protracted geomagnetic event or EMP tracing its origins to sources outside our solar system or even our galaxy, could conceivably knock out every electrical grid on Earth, but we are most comfortable believing that the chance of that happening is so infinitesimally small that is unreasonable waste time considering it. But, what people are comfortable believing does not always line up with reality.

Let’s say we accept the optimistic view that in all probability, all naturally occurring EMP’s in our lifetime will originate from the sun. When EMP originates from the sun, you may very well receive advance notice. In this case, power companies should preemptively shut down power plants in the area the EMP will affect, de-engergizing the grid, to some extent, and helping to prevent cascading failures and help limit the effect of the EMP.

In a best-case scenario, this type of EMP could just cost us a big pile of money and cause a temporary, possibly self-inflicted, blackout of limited scope … no airplanes plunging out of the sky, nuclear meltdowns, freeways instantly transformed into parking lots or other catastrophic consequences that Hollywood loves to depict.

In a worst-case scenario, a large solar storm will destroy the grids large transformers which are all custom-built and have lead times measured in years. The world lacks the production capability to replace them in less than years. This would be complicated by the fact that no one knows how to rebuild the grid from scratch and reboot it. There is not book or class on the subject. The grid was built one piece at a time and grown slowly. There is no template for patching it back together after such an event. A large solar storm connecting with the Earth is inevitable. It is not a “maybe.” It has happened before and will happen again.

So how do you get any forewarning of a naturally occurring EMP? If you have your feelers out, you may very well receive advance warning via our emergency communications channels since equipment constantly monitors the sun. If you do not hear about beforehand, other folks probably would, but even if you were alone, you could deduce that it was an EMP and not a garden-variety power outage by the fact that it would be accompanied by an interruption in RF communications.

So when in doubt, grab a transistor radio and tune in to your local emergency station. If the radio seems to be working, but the station is off the air, your area may have experienced an EMP of natural origin but may still be able to receive stations transmitting from farther away. Determining the scope and duration will require more a more persistent intel collection effort on your part.

Man made EMP occurs when nuclear weapons are detonated high enough in the atmosphere to excite high energy electrons via Compton Scattering. This results in a thousand-fold increase in the EMP that would normally accompany such a nuclear detonation. EMP theory is common knowledge available to anyone. Specific weapons programs and testing is all classified, but it would be beyond naive to think that both we and our enemies have not developed super-EMP weapons.

Outside game theory, it may not possible to accurately predict the probability of when EMP weapons will be used, but rest assured that our enemies have been developing them … likely for 50 years or more.

Back To Basics: How To Make Rum At Home

diy rumOk, so this one is for those of you who just don’t want to spend life after SHTF without the occasional cocktail. For that matter, booze is going to be a hot trading commodity if a global, world-altering event occurs and alcohol can actually be used to sterilize wounds. So, we’ll just say that we’re going to teach you how to make rum at home “for medicinal purposes only”. Wink, wink.

What Is Rum?

We all know that rum is a liquor that comes in every color from clear to almost black. It can be very light-flavored, spiced or even dark and rich. What most of us DON’T know, though, is what It’s actually made of.

In essence, rum is just molasses, sugar, yeast and water. That’s it. Of course, if you want to make it a spiced rum, you’re going to need to add those too, but those are the four basic components that make up rum. Oh, and time. It’ll take anywhere from 4 to 10 days from pot to glass.

What Equipment Is Required to Make Rum at Home?

This is where it gets tricky. You can get really fancy with this process or you can keep it fairly simple. Since we tend to be the kind of people who like to keep it simple, that’s what we’re going to do today.

There are several recipes and directions out there that tell you how to make homemade rum one bottle at a time, but what’s the fun in that? We’re going to make ours in a 5-gallon bucket.

You’re also going to need a stockpot, a hydrometer, an airlock and a distiller. You can make your own airlock fairly easily by following many of the instructions that you find online or you can pick on up off of Amazon for about two bucks. Just buy one; it’ll work like it’s supposed to and you won’t have to dig around for a cork and a pen and epoxy and all the other stuff required to make your own.

Here are your basic ingredients:

  • 3 1/2 gallons of water
  • 2 pounds of sugar
  • 3 quarts of molasses
  • 1 Tbsp. distillers yeast (though I know of a couple of old shiners that swear that they’ve used Fleishman’s active dry baker’s yeast forever and that it works just fine.)

The standard rule for most yeasts is 1 tablespoon per 5 gallons of wort, or beginning product.

How to Make Rum at Home

Now we’re getting down to the brass tacks. There are actually only two steps in making the rum; three if you’re going to age it. That’s not strictly necessary, though if you want that dark, heavy flavor, you’re going to have to do it.

Without aging, you simply won’t get that dark, oak color and flavor. If you ask the connoisseurs, rum should be aged for at least a year. You can wait that long if you really want to, but I doubt that most people will after SHTF. It’ll be tough enough to wait the 10 days!

Before you do anything, you need to make sure that ALL of your equipment is squeaky clean. Just a bit of dirt or bad bacteria will ruin your batch of rum.

The first step is fermentation. If you’ve read any of my wine or beer making articles, you know how this works. You need to add half of the water and all of the sugar and molasses to a stockpot. If you have one big enough to hold all of the water, then do so.

Bring the water up to where it’s warm, but not so hot that you can’t stick your finger in it. Dissolve the sugar and molasses well. The sugar will be easy; the molasses will take a little more work.

Let the mixture cool until it’s just warm – if you have a candy or meat thermometer, test it – it should be between 75-80 degrees. It needs to be warm enough to activate the yeast but not hot enough to kill it. Take out a cup or so of the sugar water and dissolve the yeast in it. When it starts bubbling and foaming, you’re in business. Add it back into the pot with the rest of the sugar water.

Now you need to pour the wort (that’s what it’s called at this point) into your fermentation bucket. This can just be an extremely clean 5-gallon bucket but you need to set it up with your airlock attached to it first.

Lock the lid down and wait for the fermentation process to start. You need to store the bucket in an area that’s between 70-80 degrees F. Within 24-48 hours, you’ll notice that there are no more air bubbles coming through the airlock.

This is when you start timing your rum. It will take 3-10 days for it to be ready. Use your hydrometer to test it every day after about the 3rd day. When the hydrometer hits 990 or stays the same for three days, it’s time to distill it. 990 will put it at about 16-18% alcohol, or 32-39 proof. Letting it sit a bit longer may make it a bit stronger. That’s when you follow the 3-day rule.

Here is an extremely important step that you don’t want to skip. Once the hydrometer says that it’s done, place your bucket somewhere cool for a dad so that the yeast settles to the bottom, if it hasn’t already. You’ll know because the top of your wort will be foamy looking. If it’s not, the yeast has already settled and it’s ok to distill it.

DO NOT pour the yeast into the distiller. It will alter the taste of your rum. Speaking of tastes, your wort may smell really funky at this point; don’t worry about it because it’s supposed to.

Now, to the distiller. You can buy one or you can build one by following the link to the pressure cooker distiller  in this article. Just run your wort through the distiller. The first time through, it may still have a bit of an amber color to it. Taste it and if you want it a bit more refined, run it through again. Just run it through the distiller until you’re happy with it.

At this point, you can drink your rum or you can put it in a cask and age it. You can also get fancy and add some oak chips to the bottom of your jars (unless you’re using bottles, then this can be a bit tricky) and let the rum sit for a few days absorbing the flavor of the wood. If you like spices, add some cinnamon or other favorites. There are plenty of recipes across the web for “spiced rum”.

My husband and I are both 63 years old and we were born and raised in big cities; Seattle & San Francisco. Even though we have been city people all our lives but there comes a point when it becomes too much concrete, too much noise, too many rude people, too much traffic and too much everything.

My husband worked for the Police Dept for 35 years and by the time he retired in 2010, he could not get out fast enough. I was both a language teacher and Ballroom Dance Instructor for my 35 years of employment.

How Our World Is Changing: Christianity Under Siege

big bibleWhile there are many on the left who would like to erase it from history, the fact is that the United States of America was founded by Christians to be a Christian nation. The vast majority of the signers of the Constitution and the soldiers who died in the Revolutionary War proclaimed Christ as Lord. Yes, there were atheists amongst them, but over 90% were Christian.

The writers of the First Amendment, which guarantees us freedom of religion, as well as freedom of expression, weren’t thinking about giving Muslims and Hindus freedom to believe as they wanted to. They were trying to ensure that different denominations of the Christian faith didn’t persecute each other. Many of the earliest settlers came to these shores in search of religious freedom, trying to get away from persecution in Europe.

Yet today, we see those same Christian beliefs and those who follow them under attack. Apparently, religious freedom has been redefined by the political left to mean freedom from Christianity and the Bible, not freedom to follow one’s own religious beliefs.

Where Is This Coming From?

We can’t really lay the blame on any one doorstep. There are a number of different groups, all of which are opposed to Christianity, which have decided that Christianity is an offense to them directly. In response, they have chosen to attack Christians and Christianity, in order to remove it from blocking their desires.

These groups use names like homophobic and Islamphobic to describe Christians, calling them racist and haters but they do so without understanding that which they are denouncing. There is a large element of assumption in those names and the hate that they assume is in the heart of the Christian.

Herein lies a lot of the problem. When people start assuming what others believe and feel, they universally get it wrong. Believing that someone hates you doesn’t make them hate you. But unfortunately, there are just enough Christians around who do hate these people, that it justifies the names of the accusers, at least in their own minds.

When one feels hated by another, it is natural to respond in kind. It takes a person with great compassion, understanding and self-discipline to not respond in hate, to being hated. So, these people, most of whom have no reason to avoid hating Christians, continue hating those who they think hate them.

Of course, few Christians actually hate these people. I won’t deny that there are some, but the vast majority of Christians only want to be left alone by them. If you ask Christians about homosexuals, the only thing that most say is something along the lines of, “That’s their choice, I just want them to leave me alone.” Pretty much the same response will come when asking them about Muslims, although they might have more concern about the violence of the Muslim extremists.

With Christians thinking like that, where does all the assumption of hate come from? Simple, the Bible says that homosexuality is sin. I’ve got a surprise for the homosexuals in the world. It’s possible to not be in agreement with their lifestyle, while still accepting them as people. Accepting them doesn’t mean that Christians have to accept their lifestyle.

Let me put it in another, similar context. The Bible says that adultery is a sin as well. Most Christians will tell you that just as clearly as they will say that homosexuality is sin. When they find someone committing adultery, they will say it’s wrong, even if the person committing it is their best friend. Actually, they are more likely to say it’s wrong if the person is their best friend. But that doesn’t mean that they hate their friend or that they won’t talk to them again. They’ll probably talk themselves blue, trying to talk the “sinner” into repenting.

When Law Overcomes the Belief

The attacks which are being levied against Christianity, in the courts and in the legislature, are all based upon that assumption of hate; a hate that doesn’t exist. It is being used as an excuse to limit the First Amendment rights of Christians, calling their beliefs, “hate crimes.”

I am a firm believer in Freedom of Religion. Not as the liberal left is trying to define it, but as the writers of the Constitution understood it. I don’t care if you’re Christian, Buddhist, Muslim, Hindu, Jewish or believe in the ancient Greek mythology. That’s between you and God. When I became an officer in the military, I swore an oath to defend your right to your own religious convictions and although I’m no longer in, I still stand by that oath. Believe what you want, but in turn, you must allow others to believe as they want too.

In recent times, we’ve seen a number of cases in which political and judicial pressure has been placed on Christians to go against their faith. I guess it started becoming obvious with Obamacare. Several businesses and religious organizations had to go to court, in order to try and receive an exemption from paying for abortion, something that Christians call murder. Yet, Obama was handing out free exemptions to his friends, in a glaring case of crony capitalism.

Did you know that Muslims are exempt from Obamacare? Apparently their religion has something against insurance. So, they get a free ride from the whole kit and kaboodle, but Christians are being forced to pay for abortions that they disagree with. That’s fair?

Now, Christians are being forced to support same sex marriages, even though they disagree with them. Christian owned private businesses are being fined crippling amounts for not providing services to those marriages, because it’s supposedly “discriminating.” It doesn’t matter that the homosexual couples sought out a Christian business specifically, so that they could bring up a case against them. All that matters is the feelings of the homosexuals.

Sure, let’s destroy the lives of others, just because they don’t agree with our lifestyle. If Christians had that attitude, there would be no homosexuality at all, and we’d go back to the days when they were stoned to death.

Now, with the Supreme Court weighing in and saying that same sex couples have a right to get married, we’re seeing a new salvo being blasted at Christians. Forget that their ruling doesn’t make it law and forget that it was a totally illegal ruling anyway, adding something to the Constitution that isn’t there; the LGBT community is going wild. In their eyes, and apparently in the eyes of the government, the Supreme Court ruling has made it law. Same sex couples are now flocking to the County Clerk’s office to get their marriage licenses.

There, in one obscure county clerk’s office, they encountered a Christian who didn’t agree that the Supreme Court’s decision made it law. She refused to issue a marriage license, following her own understanding of the law and her Christian faith, and asked that her name be removed from the marriage license. She didn’t feel that she could issue those licenses because it would be a violation of her Christian beliefs and her personal morals. Seems rather simple to me. All they had to do was put someone else’s name there. But no, a judge decided to throw her in jail, to teach this disobedient Christian a lesson. Granted, she only spent a couple of days in jail; but still, that was the judge’s response.

Where is the law which says we are to give up our humanity, our beliefs and our conscience, just because they don’t line up with another person’s? Muslims aren’t expected to do that. Homosexuals aren’t expected to do that. But Christians are being expected to do that and it’s becoming more frequent all the time. We, those of us who believe in Jesus Christ as our Lord and Savior, are being denied our faith, in the very country where Christians invented the idea of Freedom of Religion.

The battle is not yet over. There will be many more salvos fired before it is. Sadly, it is a war for which I don’t believe there is much hope. Those who oppose Christianity aren’t constrained by Christian morals. So they will use weapons that Christians won’t touch. That will ultimately give them the advantage.

We must stand. Those of us who are conservatives, who believe in the Constitution, as written by the Founding Fathers, must take a stand. We must make our voice be heard. We must cry out for justice and keep on doing so, until justice returns to this land. It must not be a self-serving cry either; but one which takes into account the equal rights of all Americans. We must stand for the rights of the Muslims and the LGBT community, as well as the Christians. Fair treatment under the law is the only acceptable answer to what is happening today.

The Easy Way To Canning Meat Off Grid

Canning meatThough there are many different methods of preparing meat for long-term storage, without a doubt, canning it is the easiest way to store large quantities of it in a manner that gives you an almost eternal shelf life.

Canning meat off grid is pretty much the same as if you do it in the modern fashion; as a matter of fact, if you have solar power, you can probably use the same methods that everybody else does.

It used to be considered safe to simply can your meat in boiling water baths but that’s not the case anymore. If you’re near sea-level where the boiling point of water is the highest, you MAY be OK to can your meat using the water bath method as long as you keep it at a hard boil for at least three hours. Even then, there’s no assurance that it will be safe to eat though our older generations did it and seemed to fair ok.

The recommended method of canning meat (and low-acid vegetables) is to use a pressure canner. This is because of the high risk of botulism. Botulism is a type of food poisoning that can quite literally kill you if you get it.

It affects your central nervous system and causes facial and/or body paralysis, difficulty breathing and swallowing and other not-so-pleasant reactions. Needless to say, if you can’t breathe, you’re going to be in a bit of trouble.

Botulism is caused by the bacteria Clostridium botulinum. This bacteria is extremely difficult to kill with the average heat that is used in water bath canning and can live without oxygen in your jars. As a matter of fact, it produces oxygen, which is why you should throw out any canned foods that have bulging lids or bubbles or foam on the top or up the sides when you look at the jar.

We’ve gotten a bit astray, but I wanted to really drive home why it’s critical to can your meat using a pressure canner instead of using a water bath. Now we can proceed with the actual methods of canning meat off-grid.

Materials needed for canning meat

tattler lidsIn order to can any type of food, including meat, you’re going to need glass jars, lids and rings. The problem that many off-grid people will face in the event of a disaster is that the jars and rings can be reused but the lids can’t. Or at least MOST of them can’t.

There are now a couple of companies that make lids that can be reused almost endlessly, so even if they cost a bit more, they’ll pay for themselves many times over. The reusable lids that I’ve used are Tattler brand. The second good thing about them is that they’re BPA-free.

When using these lids though, there are a couple of differences between them and the standard lids that you’re probably used to. When you put the lids and rings on the jar, you need to unscrew the lids a quarter of a turn in order to allow the hot air to escape while the contents are processing. Once the jars of food are processed,  remove them from the canner. As soon as you do this, tighten the rings back down so that the rubber can seal correctly as the food cools.

When it comes to reusing your jars, always make sure that you thoroughly clean them and inspect them for any flaws. If there is even the slightest chip anywhere, especially along the mouth, then use it to store your dry goods or other items that don’t require a seal.

You’ll also need a pressure canner. The good thing about a pressure canner is that you can use it as a water bath canner for all of your fruits and veggies that aren’t low acid.

Canning without a stove

This is where it’s going to get a bit tricky. If you have an old-fashioned wood-burning cook stove then you’re in a much better position to can foods, especially if you’re pressure-canning them. Remember one thing though – if you’re without power, that means that you’re without air conditioning so canning inside is going to turn your house into an oven in the middle of the summer.

Though many people say that pressure canning over an open fire is impossible, it’s really not. That’s not to say it’s easy because it’s not, but it IS possible. You’re going to need A LOT of wood because you’re going to need to keep your fire hot enough to sustain the pressure inside of the canner.

If the water quits boiling for even a bit, you’ve already lost because the meat needs to stay under pressure for the amount of time necessary (it will vary based on the size of your jars) in order to kill botulinum bacteria.

Cinder Block GrillHere’s how I’ve seen my mom do it (she’s really a homesteading gal!). She built her own outdoor grill using cinder blocks. Her canning side was surrounded by three sides by cinder blocks and her grate was placed at the top of two blocks, so that the canner was pretty close to the fire.

You want to start with a really hot fire; your canner will pressurize much faster that way. Also, have a big supply of wood handy; remember that if you’re canning multiple batches, this is going to turn into an all-day (or even all week) job. Green beans need to process under pressure for about 25 minutes if you’re using quart jars. Quart jars of meat needs 90 minutes of processing!

Your canner can only hold so many jars, so if you’re doing multiple batches, prepare to have enough wood to keep that fire hot for several hours. You’re going to have to watch your fire closely. You want it hot enough to bring the pot to pressure but not so hot that you blow it up!

Another good tip that I read from somebody else was that if you’re sterilizing your jars outside, put a lid over the pot; otherwise ashes will get in the water. The last thing that you want to do is add extra work to an already excruciatingly long process!

Be extremely careful when you’re canning over an open fire. It may be best to start with some water bath canning so that you can get a feel for how much wood it takes to keep the water boiling but not overflowing, etc. Then after you get a better feel for the process, move up to pressure canning.

Just because you don’t have electricity doesn’t mean that you’re unable to can your foods. Oh, and one final tip that my mom taught me when I was a kid and we were camping: if you put dish soap on the outside of your pots when you use them over an open flame, the black soot will come off much easier! Don’t you just love tips from mom?
